There are really three jobs a serving line has to do, and the range is organised around them. Hot buffet counters<\/strong> hold cooked dishes at safe serving temperature in heated wells or bain-marie. Cold buffet counters<\/strong> and salad bars<\/strong> keep chilled and fresh items at temperature in refrigerated or iced wells. Ambient counters<\/strong> display breads, pastries, desserts and dry items at room temperature. Alongside them, the waiter service station<\/strong> is the back-of-the-room furniture that keeps service moving — cutlery, crockery, linen, condiments and a point-of-sale position close to the floor.
